is and his been for some years $125.00 a month. It seems to me unreasonable to except a man to go on working year in year out and with no chance of an increment or of promotion. I think that the cheapest way to collect in the Western district would be to give Mr. Laat incremental pay and call him Senior Bailiff and Excise Officer. It would of course be laid down that the Senior Bailiff lived at Au Tau. Hie pay would be $1500.00 to $1800.00 by $100.00 incremente trientially. The present messengers will be required in any case and Mr. Chu Tak Hing will still draw $5.00 a month.

The Tung Mi Distillery with three large stills is the largest in the Colony and is situated at Causeway Bay nwar the Polo Ground. Two kinds of jars are used 22 and 27 catties! the daily outturn is I am informed, but am unable to verify, from 80 to 100 jars and the quantity passed into consumption on which duty is paid averages 2200 gallone. In addition to the licensed warehouses is alao supplied for blending purposes about 70 jars weekly.

The next in importance is the Kwong Shing Yuen with ten stills, then Tung Li Chan with nine and the remaining ones have six or four stills each. There are seven small shops at Chin Wan; these distil about twenty catties daily for their own local retain trade and began duty payments on the 1st January only.

Alcohol is used to some extent by the distilleries for making vinegar samples of which were taken from the two largest distilleries and sent to the Government Analyst with result that the vinegar from the Tung Mi Distillery sample showed 2.75% by weight and that of the Kwong Shing Yuen 1.97% of alcohol. Dr. Browne stated:!--

"The amount of vinegar found correspond xi to the alcohol
